Company Overview

Little Fires is a design-led, high-energy cocktail lounge in Shoreditch combining agave-forward mixology, elevated Oaxacan-inspired dining, and hi-fi sound/urban culture. As part of the Destination9 group, we're building a scalable hospitality brand grounded in creative beverage programmes, live events and smart operational systems.

Role Summary

We are seeking a passionate and technically excellent Head Bartender / Mixologist to drive our bar programme. You will lead from the bar, develop creative cocktails (including pre-batching and fat-washed spirits), train your team, optimise operations, and contribute to elevating the venue's beverage revenue and brand reputation.

Key Responsibilities

  • Lead the bar service professionally: consistent speed, precision, guest engagement and high presentation standards
  • Design and refine our cocktail menu: classic and signature drinks, with focus on fat-washed spirits, pre-batches, seasonal ingredients and agave spirits
  • Implement and oversee pre-batching protocols: ensure consistency in flavour, speed of service, portion control and cost-efficiency
  • Manage fat-washing operations: correctly prepare infused/fat-washed base spirits according to our menu requirements and hygiene standards
  • Train, mentor and manage bartenders and barbacks: ensure they understand recipes, batching, presentation, service flow and guest interaction
  • Maintain bar inventory, stock control, ordering, supplier relationships and cost awareness
  • Oversee bar mise en place, equipment hygiene, cleaning schedules, compliance with licensing and H&S regulations
  • Collaborate with events and private-hire team: assist with bespoke drink menus, brand activations, tastings and events
  • Monitor service metrics: upsell attach-rates, drink margins, service times, waste control, guest feedback

Ideal Candidate Profile

  • Minimum 2-3 years' experience in a quality cocktail bar or high-end bar venue; leadership experience preferred
  • Strong technical mixology skills, including proven experience with pre-batches and fat-washed spirits
  • Highly organised and process-oriented: understands preparation systems, service flow and maintaining consistency at pace
  • Excellent guest-facing and team-leadership skills: you will lead by example and coach your staff
  • Commercially minded: aware of cost control, margins, stock management and how drink programmes drive revenue
  • Creative mindset with strong attention to detail: you take pride in flavour, presentation and guest experience
  • Passionate about hospitality, cocktails, spirits and delivering memorable experiences
