Job Description The main responsibility is to supervise the Chinese production kitchen and support the Executive Chefs in our unit. You will have a good knowledge of specific ingredients, cooking methods and act as a team leader to motivate the team. You will be responsible for overseeing, training, evaluating, and counselling the team ensuring compliance with company standards. Working closely with the Executive Chef team to ensure that consistent quality products in the Chinese kitchen are produced following all DO & CO requirements. Day to day managing and supporting of the Chinese Kitchen team. To maintain high quality standards in staff performance, Chinese food production and presentation service procedures. To Ensure all kitchen appliances are kept clean and are well maintained and report any issues to the Head Chef. Planning production to the daily schedule and ensuring the exceptional quality is maintained at its highest level with maximum efficiency in accordance with DO & CO regulations as set by the Quality Assurance team. Ensuring operations adhere to all SOP’s and ALL relevant Critical Control Points, Health and Safety, Food safety and all legal requirements. Constantly performing quality control checks to ensure specifications are met on raw materials and finished products. Ensure the correct cleaning and sanitising chemicals are used in compliance with EHO standards in the kitchen and take corrective action as required. Qualifications Passion for Authentic Chinese Cuisine:A genuine enthusiasm for cooking traditional Chinese dishes, with a focus on flavor and authenticity. Extensive Knowledge of Chinese Culinary Techniques:Proficient in various cooking methods, including stir-frying, steaming, and braising, as well as an understanding of regional variations within Chinese cuisine. Commitment to Quality Ingredients:Strong passion for using fresh, high-quality ingredients to enhance flavor and presentation. Ability to Thrive in Fast-Paced Environments:Proven capability to work efficiently under pressure while managing multiple orders and prioritizing tasks effectively. Attention to Detail:Exceptional focus on maintaining consistency in food presentation and quality, ensuring that each dish meets high culinary standards. Expert Knife Skills:Proficient in various cutting techniques and safe handling of raw fish and other ingredients. Food Safety and Sanitation Knowledge:In-depth understanding of food safety regulations and best practices to ensure a safe and clean kitchen environment. Strong Communication and Teamwork Abilities:Effective communicator with the ability to collaborate seamlessly with kitchen staff and front-of-house team to deliver exceptional dining experiences.
