Duties and responsibilities related to the Pastry Demi Chef de Partie position: As a Pastry Demi Chef de Partie, you will play a vital role in supporting the Pastry Chef de Partie and Sous Chef in delivering consistently high-quality pastry and dessert experiences across all outlets. You will be expected to demonstrate creativity, precision, and a commitment to excellence in every aspect of your work. Preparation: Execute all aspects of Mise en Place (MEP) for pastry and bakery items, ensuring readiness and consistency for service across multiple outlets. Food Quality & Presentation: Assist in the preparation and presentation of desserts, pastries, and baked goods to the highest standards, maintaining consistency in taste, texture, and visual appeal. Hygiene & Safety Compliance: Uphold rigorous hygiene and food safety standards in accordance with HACCP and company policies. Workstation & Equipment Maintenance: Ensure all pastry kitchen areas, tools, and machinery are clean, organised, and well-maintained to support efficient operations. Policy Implementation: Support the implementation of food policies, including allergen management and dietary requirements, ensuring compliance and guest safety. Inventory & Ordering: Monitor stock levels, assist with ordering, and ensure proper storage and rotation of pastry ingredients to minimise waste and maintain freshness. Team Collaboration: Work collaboratively with the pastry and wider kitchen team, contributing to a positive and productive environment. Learning & Development: Engage in continuous professional development, attending training sessions and seeking opportunities to expand your pastry skills and knowledge. About You Proven experience in hotel pastry or bakery operations, with the ability to manage and support a section of the pastry kitchen effectively. Solid knowledge of pastry techniques, baking methods, and a strong commitment to maintaining food safety and hygiene standards. Excellent communication and teamwork skills to work effectively with chefs, kitchen porters, and front-of-house staff. Capable of working under pressure in a fast‑paced environment, especially during peak service hours. Experience Preferred: Previous experience in a similar role within a luxury hotel environment or fine dining restaurant. Proven work experience or exposure to London‑based hotels, with knowledge of UK hospitality standards, local compliance (e.g., Food Hygiene Rating Scheme), and service expectations for international guests. Level 2 or higher certification is preferred, with strict adherence to health and safety regulations.
