We are seeking an experienced Executive Head Chef to lead our pub kitchen at London Southend Airport, where we provide quick, easy, and happy experiences for passengers and partners.

About the Role

The Executive Head Chef will be responsible for running the back of house operations, ensuring the highest health and hygiene standards, and maintaining quality standards. This includes managing food purchasing, ordering, delivery, storage, preparation, and maintenance.

You will lead, motivate, and inspire a team of chefs to prepare and deliver exceptional quality food and dishes efficiently. Key responsibilities include:

  • Managing the opening and closing of the kitchen according to the highest standards.
  • Ensuring all food and products meet our recipes, portioning, cooking, and serving standards.
  • Maintaining the kitchen's cleanliness and meeting required food safety hygiene standards.
  • Being accountable for team safety around kitchen equipment and escalating maintenance issues promptly.
  • Completing food safety compliance forms and reports in a timely manner.
  • Effectively managing chef team scheduling and passenger flow/need.
  • Working with the general food and beverage manager to plan and price menu items, establish portion sizes, and prepare standard recipe cards.
  • Identifying and actively participating in the recruitment and training of new chefs.
  • Maintaining accurate food-ordering and stock levels using provided tools.
About You

To be successful in this role, you should have:

  • A minimum of 3 years' experience working in a professional kitchen.
  • Food Safety Level 3 certification.
  • Leadership skills, passion, and pride, with the ability to work in a high-pressure environment.
  • Positivity, high energy, and a 'can-do' attitude.
