General Manager - Catering Unit

Cartwheel Recruitment Ltd is seeking a seasoned General Manager to lead our catering team for HMP prison services in Oxfordshire. As a key member of our team, you will be responsible for the operational and financial management of the unit, focusing on prisoner catering and staff coffee shop services.

Key Responsibilities:
  • Ensure optimal operational and waste management processes are in place, with regular reviews to maintain production efficiency.
  • Maintain and improve the Return on Investment (ROI) by adhering to company policies and client requirements.
  • Implement new products, planograms, procedures, and menu specifications, ensuring they meet guidelines and brand standards.
  • Develop and maintain strong commercial relationships with suppliers to achieve the highest financial return.
  • Coordinate daily tasks and ensure accurate inventories and statistical reports are completed on time.
  • Ensure strict compliance with Aramark Hygiene and Safety requirements.
  • Prepare and manage accurate projections for P&L accounts, including raw materials and wages.
  • Line manage Team Leaders, Senior Team Leaders, Senior/Head Chefs, and in some cases, direct line management of Team Members.
  • Ensure Team Leaders and Team Members receive appropriate training on company policies, legal, and health and safety requirements.
  • Champion a training culture within the team to ensure succession planning.
  • Oversee the performance evaluation process for staff on site, ensuring timely completion and alignment with agreed objectives and targets.
  • Plan and lead team management meetings and daily briefings.
  • Ensure work packs and staff training records are maintained as per company policy.
  • Report any equipment issues that may pose a risk to staff or clients to the health and safety helpline.
  • Verify and act on food diaries on site as necessary.

  • Proven track record in delivering budgeted profit levels
