We are seeking a skilled and motivated Chef De Partie to join our culinary team at Gilpin Hotel & Lake House.

Responsibilities
  • Prepare and cook dishes according to recipes, guidelines, and instructions within all sections of the open kitchen, ensuring that the quality, taste, and presentation of the dishes meet established standards.
  • Execute culinary techniques specific to the assigned section, ensuring that the quality, taste, and presentation of the dishes meet established standards.
  • Assist in the setup and organization of the assigned section before service, ensuring that all necessary ingredients, equipment, and tools are available and in proper working order.
  • Monitor and maintain the quality and consistency of dishes throughout the cooking process, reporting any quality or consistency issues to senior chefs for resolution.
  • Manage ingredient inventory for the assigned section, ensuring proper stock rotation, storage, and labelling.
  • Work closely with the culinary team, effectively communicating and collaborating to ensure smooth operations and timely service.
  • Contribute to menu planning and development, working closely with senior chefs to create innovative and delicious dishes.
  • Adhere to strict food safety and hygiene standards, including proper handling, storage, and labelling of ingredients.
  • Maintain cleanliness and sanitation in the assigned section, following all health and safety regulations.
  • Show a desire to develop and complete any training courses available and encourage others to do the same.
  • Cook confidently and present food to guests well, able to explain dishes in a clear, confident, and professional manner.
  • Participate in training programs and workshops to enhance culinary skills.
  • Present yourself professionally at all times, wearing clean, pressed uniform and maintaining attention to personal hygiene.
Qualifications and Requirements
  • Culinary qualification or experience in a professional kitchen is essential.
  • Food hygiene qualification is mandatory.
  • Prior experience in a professional kitchen, preferably in a similar role, is highly valued.
  • Strong culinary skills with knowledge of various cooking techniques and kitchen equipment, particularly in the pastry section, are required.
  • Attention to detail and a commitment to delivering high-quality dishes are crucial.
  • Understanding of food safety and hygiene standards and the ability to follow them strictly is essential.
  • Excellent teamwork and communication skills to effectively collaborate with the kitchen team are necessary.
  • The flexibility to work evenings, weekends, and holidays as per the demands of the restaurant is expected.
  • Ability to act as a First Aid Aider or Fire Warden in the event of an accident or emergency is a requirement.

  • Salary: £32,500
  • Gratuities allocated on a points basis, depending on development tiers (average levels: £153 - £460 per month)
