About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at the Aberdeen Altens Hotel. As a key member of our kitchen brigade, you will be responsible for assisting the Head Chef in managing the kitchen operations and deputising in their absence.

Key Responsibilities

  • Assist the Head Chef in managing the kitchen operations, including menu planning, food preparation, and inventory control.
  • Supervise junior members of the kitchen team and provide guidance and support to ensure high-quality food production.
  • Assist the Head Chef in creating and developing menus, including special event menus, and ensure that they are creative and seasonal.
  • Manage measures to control payroll and food costs, ensuring that the kitchen operates within budget.
  • Assist with regular internal self-audit to ensure compliance with fire, health, and safety regulations, as well as food hygiene standards.
  • Assist with purchasing and stock control, ensuring that the kitchen has the necessary ingredients and supplies to meet demand.
  • Assist with training and coaching the kitchen team, including preparing staff rotas, conducting regular trainings, and providing constructive feedback to ensure quality of product and service.
  • Effectively communicate with the Food and Beverage team and the Sales team to ensure seamless day-to-day operations.

Requirements

  • Proven experience as a Sous Chef or similar role in a high-volume kitchen environment.
  • Ability to adhere to company policies and procedures, including fire, hygiene, health, and safety regulations, and licensing regulations.
  • Ability to manage multiple sections of the kitchen, ensuring that health and safety standards are met.
  • Flexibility to assist the Head Chef and other members of the kitchen brigade as needed.
  • Strong communication and interpersonal skills, with the ability to work effectively in a team environment.
  • Passion for food and a willingness to learn and develop new skills.
  • Previous experience in a similar role, with a strong understanding of quality control and kitchen standards.
