About the Role:

The Sous Chef is a vital member of our culinary team at Sussex Inns, responsible for supporting the Head Chef in developing menus, creating recipes, and planning daily specials. They will collaborate closely with the Head Chef to design the overall culinary vision for the establishment.

Key Responsibilities:

  1. Assisting the Head Chef: The Sous Chef will work closely with the Head Chef to develop menus, create recipes, and plan daily specials.
  2. Supervising Kitchen Operations: The Sous Chef will oversee the day-to-day operations in the kitchen, coordinating and delegating tasks to the kitchen staff, ensuring smooth workflow, and maintaining high standards of food quality, taste, and presentation.
  3. Training and Managing Staff: The Sous Chef will play a crucial role in training and developing the kitchen staff, providing guidance, instructions, and support to team members, ensuring they adhere to food safety and hygiene standards, and maintain consistency in food preparation.
  4. Food Preparation and Cooking: The Sous Chef will actively participate in food preparation and cooking, skilled in various culinary techniques, and responsible for preparing complex dishes, sauces, and garnishes.
  5. Inventory Management: The Sous Chef will assist in inventory management, including monitoring stock levels, ordering ingredients, and ensuring proper storage and rotation of perishable items.
  6. Menu Development: The Sous Chef will collaborate with the Head Chef in creating new dishes, developing menus, and planning seasonal or special event menus.
  7. Quality Control and Presentation: The Sous Chef will ensure that all dishes meet quality standards and are visually appealing, paying attention to details such as portion sizes, plating techniques, and food presentation.
  8. Maintaining Hygiene and Safety Standards: The Sous Chef will enforce strict adherence to food safety regulations, sanitation guidelines, and kitchen cleanliness, leading by example and ensuring all staff members follow proper hygiene practices.
  9. Handling Pressure and Problem Solving: The Sous Chef will thrive in high-pressure environments and be adept at multitasking, troubleshooting any kitchen issues, resolving conflicts, and making quick decisions to maintain smooth operations during busy periods.
