As an exceptional opportunity presents itself, we are seeking a Pastry Commis Chef to join our Food & Beverage Department at Raffles London at The OWO.

Working closely with our Executive Pastry Chef, you will assist the Chef de Partie in maintaining stock control and ensuring daily business standards. You will be responsible for the quality, production, and service of pastry/dessert/bakery in all outlets within the hotel.

Key responsibilities will include:

  1. Supporting Chef de Partie in maintaining stock control and daily production.
  2. Working towards a low-waste operation and managing costs effectively.
  3. Participating in a rota-based system to cover hotel, outlet, and event hours of operation.
  4. Ensuring awareness and adherence to policies and procedures.
  5. Contributing to the service in all kitchen outlets as business demands.
  6. Communicating with supervisors regarding overtime needs.
  7. Working with and supporting team members on the section.
  8. Collaborating with supervisors, HODs, chefs, and supporting departments to achieve operational excellence.
  9. Ensuring correct storage and labelling of food, equipment, and dry goods.
  10. Receiving and storing daily products, maintaining stock rotation and storage.
  11. Checking equipment cleanliness, working condition, and safety.
  12. Taking corrective action for non-compliant equipment.
  13. Maintaining equipment via correct channels.

Requirements:

  • Excellent leadership skills creating a positive kitchen culture.
  • Previous experience as Demi Chef de Partie in a luxury/Michelin-star/5-star environment.
  • A creative approach to producing high-quality food.
  • Ability and availability to work all shift patterns in a 7-day, 24-hour operation.
