Job Description

Fortnum & Mason is seeking an experienced Sous Chef to join our team at Café 181, our staff restaurant located in the heart of our flagship store.

Key Responsibilities:

  • Collaborate with the Senior Team to ensure the delivery of exceptional culinary standards in the section of responsibility.
  • Coach and develop CDPS and Commis Chefs to enhance their skills, leading by example.
  • Regularly inspect the Section to ensure that all audits and temperature checks are completed, maintaining the highest standards.
  • Take ownership of the stocktake and provide feedback on key indicators to the Head Chef.
  • Anticipate and address any pinch points within the kitchen, communicating them to the line manager.
  • Work closely with the Senior Chefs to produce monthly reporting for the Kitchen.
  • Develop a collaborative partnership between the front and back of house teams.
  • Effectively communicate menu information to the teams.
  • Demonstrate high levels of planning, organizing, and time management to drive operational execution across the section.
  • Ensure adherence to company policies, controls, and standards (e.g., due diligence, cleanliness, and HSE).
  • Monitor and maintain inventory, highlighting any issues to the Senior Chefs.
  • Deliver regular feedback and coaching to the team, recognizing achievements by the senior team.
  • Identify training needs of the team and coach to drive performance and enable change.

Requirements:

  • Experience as a Sous Chef in a quality restaurant.
  • Willingness to learn and grow, as well as teach others.
  • Passion for food and commitment to maintaining Food Safety standards.
  • Excellent longevity with past employers.
