About the Role

We are seeking an experienced and talented Head Chef to join our team at the Castle Inn in Castle Combe. As a key member of our culinary team, you will be responsible for overseeing the food and kitchen operations, leading and inspiring the kitchen and service teams to deliver exceptional guest experiences.

Key Responsibilities
  • Develop and implement innovative and seasonal menus that showcase the best of local and current food trends.
  • Lead the kitchen team to deliver consistently high standards of food preparation and cooking.
  • Motivate and inspire the team through regular training sessions and product tastings.
  • Establish strong relationships with food suppliers and negotiate contracts to ensure the best possible purchasing power.
  • Ensure compliance with food safety and health and safety regulations, and maintain high standards of kitchen cleanliness and maintenance.
  • Work closely with the manager and marketing teams to develop and implement effective food operations for events and services.
  • Manage stock levels, implement food wastage control, and maintain accurate records of food costs and sales.
  • Control wage percentages and ensure that systems for stock management are adhered to.
  • Participate fully as a team member within the F&B department and attend daily meetings and weekly function sheet meetings.
Requirements
  • Proven experience as a Head Chef in a high-volume restaurant environment.
  • Ability to deliver a two AA rosette standard and a desire to achieve a Michelin Bib Gourmand.
  • Strong financial awareness and experience of costing menus and managing food costs.
  • Excellent communication and leadership skills, with the ability to inspire and motivate a team.
  • Ability to build strong relationships with food suppliers and negotiate contracts.
  • Knowledge of food safety and health and safety regulations, and ability to maintain high standards of kitchen cleanliness and maintenance.
