Job Overview

We are seeking a highly skilled Luxury Hotel Stewarding Manager to join our team at Mandarin Oriental Hotel Group. In this role, you will be responsible for managing the cleanliness and hygiene of our back-of-house areas.

Key Responsibilities
  • Supervise and support the stewarding team in maintaining efficient kitchen cleaning and organization.
  • Oversee the cleaning, sanitation, and maintenance of all kitchen areas, equipment, and utensils, adhering to local UAE rules and regulations as well as our hotel group's standards.
  • Develop and enforce cleaning schedules and checklists to meet health and safety regulations, ensuring a safe environment for our guests and staff.
  • Train, mentor, and motivate stewarding staff to uphold our company standards and improve performance.
  • Ensure waste disposal and recycling practices are followed, promoting sustainability and reducing our environmental impact.
  • Coordinate with chefs and other kitchen staff to maintain seamless operations, guaranteeing exceptional guest experiences.
  • Monitor inventory levels of cleaning supplies and communicate with the procurement team for stock replenishment.
  • Assist with administrative tasks, including performance evaluations, shift scheduling, and reporting.
  • Oversee and follow through on food safety standards set by our hotel group, Safe & Sound, and UAE Municipality rules and regulations, protecting our guests' health and well-being.
Salary and Benefits

We offer a competitive salary range of AED 8,000 - 12,000 per month, depending on experience, plus additional benefits, including medical insurance, paid time off, and opportunities for professional growth and development.

Requirements and Qualifications
  • A high school qualification or equivalent is required; a degree or higher national diploma in hospitality, hotel, or business management is preferred.
  • A minimum of 2 years' experience as supervisor steward or 4 years of experience as steward in a high-end five-star luxury hotel is necessary.
  • Work experience in at least one of the following countries in the Middle East: UAE, Bahrain, Saudi Arabia, and Qatar is preferred.
  • Certification in essential food safety in catering or Serve Safe certification is preferred.
  • A strong knowledge of food safety and proper handling of dishwashing machines and chemicals is essential.
