About the Role

We are seeking an experienced Sous Chef to join our team at Fortnum & Mason, a leading luxury food and drink retailer. As a key member of our kitchen team, you will be responsible for ensuring the highest standards of food quality and presentation in our staff restaurant, Café 181.

Key Responsibilities
  • Work closely with the Senior Team to develop and implement menus that meet the highest standards of quality and presentation.
  • Coach and develop junior chefs to enhance their skills and knowledge, leading by example.
  • Conduct regular audits and temperature checks to ensure compliance with food safety standards.
  • Take ownership of stock management and provide feedback to the Head Chef on key indicators.
  • Identify and mitigate potential pinch points in the kitchen, communicating effectively with the Senior Team.
  • Collaborate with the Restaurant Team to ensure a seamless partnership between front and back of house.
  • Communicate effectively with the team to ensure menu knowledge and adherence to company policies and standards.
  • Monitor and maintain inventory, highlighting any issues to the Senior Team.
  • Deliver feedback and coaching to the team, recognizing and rewarding achievement.
  • Identify training needs and coach to drive performance and enable change.
Requirements
  • Experience as a Sous Chef in a quality restaurant.
  • Ability to learn and grow, with a passion for food and excellent longevity with past employers.
  • Strong communication and leadership skills, with a focus on food safety and quality.
