About the Role

We are seeking a highly skilled and experienced Senior Sous Chef to join our team at Exclusive Hotels. As a key member of our culinary team, you will be responsible for the day-to-day management, preparation, and service of all food within the hotel.

Main Responsibilities
  • Ensure the smooth running of kitchen operations at all times
  • Manage sound stock control and procedures
  • Manage communication within the kitchen and with other departments
  • Assist the Executive Chef in menu writing, planning, and assessing current industry trends and initiatives
  • Ensure the standard of food and service are executed to the highest level at all times
  • Run the kitchen in the absence of the Executive/Head Chef
  • Ensure all financial aspects of kitchen management are adhered to, including costings within budgeted guidelines
  • Manage food flash, processing of invoices, and upkeep of revenue figures in the absence of the Executive Chef
  • Control food wastage
  • Maintain the highest levels of food hygiene and health and safety at all times
The Ideal Candidate

We are looking for a candidate with a true passion for food, strong communication skills, and a commercially astute and financially aware individual. You should have a strong, high-volume kitchen background from within the hotel, venue, or restaurant sector, at a minimum of 3 rosettes or 1 Michelin star. You should be highly organized, a proven team leader, and have a keen and enthusiastic attitude coupled with drive, energy, and stamina.
