Job Title: Pastry Chef De Partie

We are seeking an experienced Pastry Chef De Partie to join our team at a major 5-star luxury hotel based in central London.

About the Role

The successful candidate will assist the Pastry Sous Chef in the preparation and service of pastries, desserts, and bakeries, ensuring the highest standards are maintained at all times.

Main Responsibilities
  1. Be fully conversant with all hotel menus, particularly those related to your designated area or as requested.
  2. Produce high-quality pastries, desserts, and bakery goods for banqueting, in-room dining, and lounge and afternoon tea.
  3. Ensure that all preparation meets the highest standards and recipes are followed as set by the Executive Pastry Chef.
  4. Assist in the development of new pastries, desserts, and bakery goods in coordination with the Executive Pastry Chef and Pastry Sous Chef.
  5. Maintain portion control in accordance with company guidelines.
  6. Dispense pastries, desserts, and bakery goods only against order.
  7. Submit accurate food stock sheets for your section to the Pastry Sous Chef.
  8. Ensure good stock rotation and correct storage procedures.
  9. Check daily menus and function sheets to determine the quantity of food items to be cooked.
  10. Maintain the correct level of mise-en-place in stock.
  11. Participate in the preparation of basic mise-en-place with the Commis Chef and cooking of pastries, desserts, and bakery items ready for service.
  12. Maintain a clean and tidy work area, including reach-in and walk-in fridges.
  13. Supervise staff in your section and maintain discipline in a fair and consistent manner.
  14. Identify special training needs within your section and complete the department's training records on a regular basis.
