About the Role

We're seeking a skilled Senior Sous Chef with expertise in Chinese/Cantonese cuisine to join our team at The Cavalry Global.

The ideal candidate will have a strong background in traditional Chinese cooking techniques, including Dim Sum and wok cooking.

As a Senior Sous Chef, you'll be responsible for overseeing the entire kitchen, ensuring all dishes meet the highest standards of quality and consistency.

Main Responsibilities
  • Oversee the wok station and Dim Sum preparation to maintain exceptional quality and consistency.
  • Support the Head Chef in developing and delivering an exceptional menu that showcases Chinese/Cantonese cuisine.
  • Train and mentor junior chefs, sharing your expertise in wok cooking and Dim Sum techniques.
  • Maintain high standards of food hygiene and safety in the kitchen.
  • Collaborate with the Head Chef to introduce innovative ideas that align with the restaurant's vision.
  • Assist with new openings and business growth initiatives.
Requirements
  • Proven experience as a Senior Sous Chef in a Chinese/Cantonese kitchen.
  • Exceptional skills on the wok and a solid understanding of traditional techniques, including Dim Sum.
  • Strong leadership skills and a passion for teaching and developing junior chefs.
  • Excellent communication skills and the ability to thrive in a fast-paced kitchen environment.
  • A genuine love for Chinese cuisine and a desire to create dishes that impress.
  • Valid passport and good English language skills to meet the UK skilled worker visa requirements.
