We are seeking a highly skilled and experienced Culinary Team Lead to join our team at Chartwells - Main. As a key member of our kitchen team, you will be responsible for ensuring the efficient and effective management of our unit, providing a high-quality service to our clients.
Key Responsibilities:
- Work closely with our General Catering Manager and Front of House Teams to organize and supervise the unit in accordance with company standards and statutory regulations.
- Responsible for the overall efficient and effective management of the unit, providing a quality service to clients.
- Ensure the efficient and economic use of all resources, including stock, team members, and company assets.
- Communicate regularly with clients to ensure their needs are met.
- Action plans are completed following client satisfaction surveys.
- Promote the unit and act as a Compass Advocate at all times.
- Ensure all client hospitality is delivered to the correct standard and look to up-sell to increase revenue.
- Ensure all company promotions are correctly implemented.
- Ensure all products are correctly priced in line with company specifications.
- Identify any additional opportunities and discuss with line manager.
- Action plans are completed following consumer satisfaction surveys.
- Ensure all retail areas are adequately stocked at all times.
- Ensure all customer requirements are delivered in line with expectations.
- Analyze and manage effectively all in-unit costs.
- Ensure full purchasing compliance.
- Monitor and manage GP.
- Ensure cost and sales records are accurately inputted and maintained.
- All food wastage is recorded and minimized.
- Ensure all customer requirements are communicated to all departments in advance to ensure effective planning.
- Complete labor schedule within the labor budget.
- Effectively minimize any agency and overtime spend.
- Adjust labor schedule in line with sales.
- Analyze and manage effectively all in-unit costs.
- Ensure budgets are understood and achieved.
Requirements:
- Good knowledge and experience of working with food.
- People management skills.
- Strong communication skills.
- Results-oriented and people-focused approach.
- Holding others accountable.
- Understanding customers.
- Working together for the business.
- GCSE or equivalent in English and Maths.
- Operational experience in the conference and banqueting sector.
- Computer literate.
- Strong organizational skills.
- Ability to work to strict pressured deadlines.
- Able to communicate at all levels.
- Basic Food Hygiene certificate.
- Leadership and team management skills for a small team of people.
- Minimum 3 years catering experience.
- Excellent financial acumen.
