Position Overview

The role is designed to be an integral part of the culinary team, ensuring the efficient functioning of a designated kitchen section while assisting the Sous Chef with essential management responsibilities and fostering the growth of junior chefs.

Key Responsibilities

Team Leadership

  • Oversee the operation and organization of a specific kitchen section.
  • Supervise the section team, managing breaks and workload effectively, while ensuring adherence to strict food safety and hygiene protocols.
  • Inspire the team by establishing daily performance standards and objectives.
  • Guide and mentor team members to ensure compliance with recipes and product specifications.
  • Evaluate team performance within the section, addressing any issues of non-compliance and reporting concerns to the Sous Chef.

Culinary Excellence

  • Embrace the culinary philosophy of Petersham Nurseries by demonstrating comprehensive knowledge of food and ingredients.
  • Guarantee that all menu items are prepared to a consistently high standard of quality and presentation.
  • Establish daily production targets and guidelines for the section, delegating tasks to the team.
  • Ensure all recipes are executed to specification, including temperature, seasoning, flavor, and presentation through regular quality checks.
  • Monitor inventory levels and communicate any concerns to the Sous Chef.
  • Assist in planning and forecasting stock needs, supporting the Sous Chef with ordering processes.
  • Minimize and accurately record food wastage.

Operational Standards

  • Complete all administrative tasks for the section in a timely manner, including temperature logs and wastage records.
  • Enforce food safety standards by maintaining high levels of hygiene and sanitation across all food service areas.
  • Implement recommendations from food safety audits.
  • Recognize the importance of planning and forecasting, raising issues as necessary.
  • Participate in special project work as required.
  • Organize the section's storage areas, ensuring proper food rotation and labeling, while promoting accountability among team members.
  • Maintain and update recipe documentation for the station.
  • Identify potential staffing concerns for the section that may affect scheduling.
  • Plan weekly workloads and delegate tasks effectively.

Financial Responsibility

  • Ensure effective waste management practices are in place to minimize losses and accurately log all waste.
  • Account for all stock utilized in the kitchen.

Technical Proficiency

  • Capable of performing basic mathematical calculations and conversions.
  • Competent in working across all kitchen sections and managing multiple areas as needed.

Vegetable, Fruits & Salads

  • Proficient in standard techniques for preparing a variety of produce.

Cooking Techniques

  • Skilled in various cooking methods including roasting, grilling, frying, and braising.
