Position Overview

The individual in this role will oversee the provision of a comprehensive catering service for the clients of the Catering Department.

You will be tasked with ensuring that meals are prepared according to precise recipes, ready for service within established timelines, and that all procedures are adhered to for the operation of a cook-freeze central production unit serving multiple locations.

Additionally, you will ensure that services are conducted efficiently in line with organizational guidelines and policies, maintaining a high-quality catering service for clients and staff across a series of shifts, including a 5 in 7-day work schedule with occasional weekend duties.

Key Responsibilities

- Maintain stock control at agreed levels.

- Adhere to cleanliness and hygiene standards, following the principles outlined in safe food handling guidelines and ensuring compliance with hazard analysis protocols.

- Record and monitor temperatures of refrigeration units, hot food, and blast chillers daily, documenting this information on SSTK forms and retaining records for a minimum of three months.

- Assist the Head Chef in conducting quality assurance checks by sampling dishes and ingredients as necessary, ensuring portion sizes are consistent daily. Conduct taste tests and visual inspections of all food items to guarantee that standards of flavor and presentation are upheld prior to service, and occasionally visit service areas to confirm that food served remains at optimal quality.

- Document food wastage, including leftovers and plate waste, and implement strategies to minimize food waste and associated costs.

- Uphold high standards of personal hygiene and appearance in accordance with organizational policies.

Qualifications

Essential

  • Minimum City & Guilds 706/2 or equivalent NVQ level 2 in food preparation
  • Basic Food Hygiene certification

Desirable

  • Level 3 Intermediate Food Hygiene certification

  • Experience in preparing meals for special dietary needs
  • Ability to adapt in a dynamic work environment
