Requirements

  • Prior experience as a barbecue cook is preferred
  • Strong background in kitchen operations is essential

Responsibilities

Daily Kitchen Management

  • Ensure the kitchen operates smoothly and professionally by adhering to the Head Chef's directives, completing all operational tasks safely and efficiently as required
  • Maintain regular and effective communication with the Head/Senior Chef and General Manager
  • Oversee the kitchen, kitchen staff, and daily orders in the absence of the Senior Chef
  • Assist in managing stock levels efficiently while minimizing waste
  • Ensure the kitchen is well-maintained and serviced as needed, reporting any equipment issues to the Head/Senior Chef

Food Quality, Presentation, and Hygiene

  • Guarantee that all dishes served to customers are prepared with the finest ingredients and meet company standards
  • Be accountable for the preparation and presentation of high-quality food, ensuring all final products leaving the kitchen adhere to company standards
  • Report any concerns regarding food quality and freshness from suppliers to the Head/Senior Chef or General Manager
  • Follow the Stock Labelling (DOT system) and Rotation System (FIFO) to ensure products are identifiable and utilized in the correct order
  • Monitor correct temperatures for deliveries, storage, and cooking, recording them on temperature log sheets daily
  • Support the Head/Senior Chef in implementing menu changes according to company procedures

Supervision of Kitchen Porter Team

  • Lead by example, ensuring the kitchen remains clean and presentable
  • Ensure all kitchen equipment and cleaning chemicals are utilized correctly
  • Recognize and commend good performance among team members
