Job Description:

We are seeking an experienced Executive Chef to lead our kitchen team at Kota Kai, a renowned restaurant in Porthleven. As a key member of our Senior Leadership Team, you will be responsible for overseeing the day-to-day operations of the kitchen, ensuring exceptional food quality, and working with the team to maintain expected standards.

Key Responsibilities:

  • Overall management of the kitchen department and team
  • Create and develop new menu items and recipes
  • Ensure all exceptional standards are achieved at all times
  • Responsible for the ongoing recruitment, induction, training, and appraisals of all kitchen staff
  • Stock control, ordering, and maintaining strong supplier relationships
  • Responsible for maintaining the Food GP through efficient costing of all menus and regular checking of invoicing
  • Control wage costs in line with budget and sales performance
  • Creating all kitchen rotas and managing staff levels accordingly
  • Have a comprehensive knowledge of food safety, including allergens, compliance, and administration required to maintain a 5-star food hygiene score

Requirements:

  • Head chef experience in a similar size business
  • Strong knowledge of various cooking techniques and cuisines
  • Excellent leadership and communication skills, working well under pressure and keeping a calm head to ensure the team is focused and working together to achieve great results
  • An understanding of departmental finances, including wage costs
  • Experience managing a successful food hygiene plan

Working Hours: Kota Kai is open 7 days a week in busy months, dropping to 5 days in the shoulder seasons. As Executive Chef, you would be in charge of the rota, shift plans, and managing your team, with flexibility for a 4-day working week.
