Job Summary:

The Landmark London Hotel is seeking a highly skilled and experienced Executive Breakfast Chef to join our culinary team. As a key member of our kitchen staff, you will be responsible for leading the breakfast operation, ensuring high-quality food preparation and presentation, and maintaining a positive and productive work environment.

Key Responsibilities:

  • To own and manage the overall breakfast operation, including mise-en-place and service for the section/department.
  • To ensure that food is prepared to the correct standard as specified in the recipe specification manual, and to spot-check standards frequently, including reviewing comments from guest feedback.
  • To drive all aspects of menu changes in line with the menu calendar, and to promote good communication within the kitchen and proactively leave clear handover for any colleagues taking over the kitchen.
  • To proactively research relevant new dishes for new menus and present them on a monthly basis.

Requirements:

  • 40 hours per week, on a shift rota.
  • Ability to work in a fast-paced kitchen environment and maintain a high level of productivity.
  • Excellent leadership and communication skills, with the ability to motivate and inspire a team.
  • Strong attention to detail and ability to maintain high standards of food quality and presentation.
  • Knowledge of menu planning, food costing, and inventory management.
