We are looking for a talented Culinary Specialist to contribute to our mission of supporting homeless and vulnerable adults. This position plays a vital role in ensuring that our service users receive nutritious and appealing meals in a compassionate and welcoming atmosphere.

Position Overview: Culinary Specialist

Role: Culinary Specialist

Salary Range: £26,200 - £28,000

Work Schedule: Full-time (35 hours per week) from 8am to 3.30pm

Reports To: Centre Manager

Annual Leave: 20 days plus 8 days off for bank holidays

Contract Type: Permanent (subject to a 6-month probation period)

Ace of Clubs fosters a community environment that provides transformative support for individuals facing homelessness and marginalization. We cater to the immediate needs of those in crisis, offering safety, nourishment, warmth, clothing, and access to essential services.

Job Purpose

The primary responsibility is to prepare and serve healthy, appetizing meals in a safe and hygienic kitchen for our service users. The demand for our meal service can vary daily.

Candidate Profile

  • Experienced and resilient culinary professional with a passion for food and a commitment to making a positive impact.
  • Minimum of 2 years in the catering and hospitality sector, with experience in preparing meals for large groups.
  • Strong interpersonal skills with the ability to manage kitchen operations and volunteer staff.
  • Physical stamina to work a full day in a fast-paced kitchen environment.
  • Ability to prioritize tasks and manage responsibilities effectively.
  • Flexibility to adapt to changing circumstances.

Key Responsibilities

  • Develop and prepare a diverse and healthy menu each day.
  • Maintain up-to-date knowledge of food safety protocols and implement them consistently.
  • Utilize food donations efficiently to create daily meals while adhering to budget constraints.
  • Ensure proper stock rotation and disposal of expired items.
  • Practice strict contamination control measures in daily operations.
  • Manage allergen-related inquiries confidently and effectively.
  • Address any meal-related queries or complaints constructively.
  • Uphold the highest standards of cleanliness and hygiene in the kitchen and storage areas.
  • Contribute to special events with appropriate menu planning.

Kitchen Management and Administration

  • Maintain accurate daily records, including temperature logs and cleaning schedules.
  • Collaborate with the Centre Manager for regular checks and address any issues promptly.
  • Report maintenance needs to the Centre Manager in a timely manner.
  • Understand and implement Health and Safety practices, including Fire Safety, in compliance with regulations.
  • Cooperate with statutory inspections and follow recommendations as needed.

Volunteer Coordination

  • Delegate tasks to volunteers and provide daily support and oversight.
  • Ensure adequate coverage during lunch hours and manage post-lunch cleanup.
  • Ensure compliance with Food Safety and COSHH procedures among volunteers.

Additional Duties

  • Perform other related tasks as assigned within the scope of the role, including participation in social activities outside regular hours.
  • Availability to work on designated holidays is required.

Qualifications

  • Good basic education, ideally to GCSE level.
  • Level 3 Food Safety and Hygiene in catering, or willingness to pursue this qualification.

Experience Requirements

Essential:

  • Experience in providing healthy meals for large groups.
  • Knowledge of HACCP systems and Food Safety Management.
  • Understanding of COSHH regulations and their application in a kitchen setting.

Desirable:

  • Significant experience as a chef in a charitable kitchen environment.
  • Catering diploma (e.g., City & Guilds/BTEC) and relevant Health and Safety certifications.
  • Experience in supervising volunteers and delegating tasks.

Skills and Competencies

  • Strong organizational skills.
  • Proficient in English, both written and spoken, with the ability to complete food safety documentation accurately.
  • Ability to prepare and present nutritious meals attractively using available food donations.
  • Knowledge of safe food allergen management practices.
