Role Overview
- Oversee the procurement of supplies in accordance with corporate recipe and portion specifications, ensuring minimum stock levels are maintained.
- Collaborate with the Complex Manager regarding inventory management and in-house purchasing.
- Ensure culinary standards, presentation, and back-of-house service adhere to established operational manuals.
- Implement back-of-house procedures in line with operational manuals, covering storage, washing areas, refrigeration, food prep zones, delivery areas, and waste management.
- Uphold hygiene standards to comply with company food safety and cook-chill protocols, including necessary documentation.
- Coordinate with the Complex Manager for all needs related to disposables, small kitchen equipment, and cleaning supplies through proper delegation.
- Maintain strict control and security of inventory, conducting company stock takes as needed, ensuring secure locks and key management.
- Propose menu ideas to the Food and Beverage Director.
- Manage a budget for all resources within the area of responsibility and ensure effective financial oversight.
- Establish, monitor, and uphold appropriate opening and closing procedures, including cleaning schedules.
