Role Overview

  • Oversee the procurement of supplies in accordance with corporate recipe and portion specifications, ensuring minimum stock levels are maintained.
  • Collaborate with the Complex Manager regarding inventory management and in-house purchasing.
  • Ensure culinary standards, presentation, and back-of-house service adhere to established operational manuals.
  • Implement back-of-house procedures in line with operational manuals, covering storage, washing areas, refrigeration, food prep zones, delivery areas, and waste management.
  • Uphold hygiene standards to comply with company food safety and cook-chill protocols, including necessary documentation.
  • Coordinate with the Complex Manager for all needs related to disposables, small kitchen equipment, and cleaning supplies through proper delegation.
  • Maintain strict control and security of inventory, conducting company stock takes as needed, ensuring secure locks and key management.
  • Propose menu ideas to the Food and Beverage Director.
  • Manage a budget for all resources within the area of responsibility and ensure effective financial oversight.
  • Establish, monitor, and uphold appropriate opening and closing procedures, including cleaning schedules.

Required Qualifications and Experience

  • Prior experience in a similar role is essential.
