About the Role

Lough Erne Resort, a renowned luxury resort, is seeking a talented and experienced Sous Chef to join our culinary team at the Loughside Bar and Grill. As a Sous Chef, you will work closely with the Executive Head Chef to ensure the smooth and efficient operation of the kitchen, maintain high culinary standards, and deliver an exceptional dining experience to our guests.

Key Responsibilities

  • Assist the Executive Head Chef in overseeing the day-to-day operations of the kitchen, ensuring quality, consistency, and efficiency in food preparation and service.
  • Collaborate with the Executive Head Chef to develop creative and innovative menus that showcase seasonal and locally sourced ingredients, while considering dietary restrictions and guest preferences.
  • Train, mentor, and supervise kitchen staff, including line cooks, prep cooks, and dishwashers, ensuring they adhere to standard recipes, cooking techniques, and sanitation guidelines.
  • Participate in the recruitment, selection, and onboarding of new kitchen team members, ensuring they receive proper training and understand their roles and responsibilities.
  • Maintain inventory levels and control food costs by implementing effective ordering, receiving, and storage procedures, while minimizing waste.
  • Ensure that all food preparation and cooking processes meet the highest culinary standards and comply with health and safety regulations.
  • Monitor and enforce proper sanitation practices in the kitchen, including personal hygiene, food handling, and equipment maintenance.
  • Foster a positive and collaborative work environment by promoting open communication, teamwork, and professional development among the kitchen staff.
  • Assist in conducting regular performance evaluations and provide constructive feedback to kitchen staff, recognizing and rewarding outstanding performance.
  • Stay up to date with industry trends, new cooking techniques, and emerging ingredients, and implement them effectively into the menu offerings.

Requirements

  • Proven experience as a Sous Chef or senior role in a reputable restaurant or hotel establishment.
  • In-depth knowledge of various culinary techniques, cooking methods, and cuisines.
  • Strong leadership skills with the ability to inspire and motivate a team.
  • Excellent organizational and time management abilities, capable of handling multiple tasks and priorities simultaneously.
  • Solid understanding of kitchen operations, including food preparation, menu planning, costing, and inventory management.
  • Exceptional attention to detail and a commitment to delivering high-quality dishes.
  • Excellent communication and interpersonal skills, with the ability to interact effectively with kitchen staff, management, and other departments.
  • Ability to thrive in a fast-paced, high-pressure environment while maintaining composure and professionalism.
  • Flexibility to work evenings, weekends, and holidays as required by the business.
  • Culinary degree or relevant certification is preferred but not essential, with a strong focus on practical experience and skill development.
