Job Summary
We are seeking a skilled and motivated Culinary Specialist to join our team at the University of Hertfordshire. As a Culinary Specialist, you will be responsible for the preparation and presentation of high-quality food products in a fast-paced kitchen environment.
Key Responsibilities
- Prepare and cook food to a high standard, following recipes and menu guidelines.
- Assist in the preparation of breakfast and lunch services, ensuring that food is ready on time and to the required standard.
- Maintain a high level of knowledge of all menu items, including ingredients, preparation methods, and presentation.
- Manage food production to minimize waste and ensure that food levels are maintained throughout all service periods.
- Carry out and maintain FIFO stock rotation, ensuring that stock is rotated regularly to minimize waste and ensure that the freshest ingredients are used.
- Assist the Head Chef with stock management, including ordering and receiving stock, and maintaining accurate records.
- Ensure that high hygiene and health and safety standards are maintained in the kitchen, in line with Aramark's requirements and policies.
- Capture and record all volumes consumed and overproduction, ensuring that accurate records are maintained.
- Assist in the compilation of all shift opening and closing checklists, ensuring that all tasks are completed and records are accurate.
- Discuss ideas and improvements with the line manager, ensuring that feedback is acted upon and implemented.
- Act as a trainer/coach for new team members, teaching them procedures and standards for all kitchen tasks.
- Undertake relevant training as required, ensuring that skills and knowledge are up-to-date and relevant to the role.
Requirements
- Relevant culinary experience is essential, with a passion for food and beverage.
- A flexible approach to work, hours, and duties is required, with the ability to work lone if necessary.
- A great communicator and team player, with the ability to work effectively in a fast-paced kitchen environment.
- IT literate, with the ability to use kitchen software and systems.
