Overview

Estiatorio Milos seeks a dedicated and experienced Lead Kitchen Team Member to oversee and manage their designated section within our bustling kitchen. This role demands meticulous attention to detail, exceptional culinary skills, and the ability to lead and inspire a team of Commis Chefs. The ideal candidate will ensure smooth operations, maintain the highest standards of quality, and contribute to the overall success of our renowned restaurant.

Primary Roles and Responsibilities

  • Provide guidance and training to Commis Chefs within your assigned section, ensuring they are proficient in all tasks and procedures.
  • Effectively delegate responsibilities to junior staff members while offering support and mentorship as needed.
  • Maintain a well-stocked and organized station, ensuring ample Mise En Place is prepared prior to service.
  • Collaborate with the kitchen team to prepare menu items according to established recipes and instructions from senior chefs.
  • Guarantee that dishes are presented consistently at the highest quality and served promptly during service periods.
  • Actively participate in pre-service preparations and closing duties, adhering to strict sanitary measures to ensure food freshness and prevent cross-contamination.
  • Accurately record all waste products to maintain accurate inventory records.
  • Ensure that orders for your section are accurately listed, checked, and processed or relayed to the Sous Chef as required.
  • Maintain a clean and organized work station at the end of each shift, preparing it for the next team.
  • Complete handover sheets at the end of each shift, providing relevant information to the incoming team.
  • Attend all staff meetings and training sessions as requested.

Requirements

  • Minimum of one (1) year experience working as a Demi Chef de Partie.
  • Minimum of five (5) years' experience in a high-volume kitchen environment.
  • Comprehensive understanding of culinary techniques and best practices.
  • Proven ability to lead a team, mentor junior staff members, and foster a positive work environment.
  • Excellent command of English, enabling clear communication and collaboration with colleagues.
  • COSHH trained and knowledgeable about food safety regulations.
  • Flexibility to work nights and weekends as required by operational needs.
  • Ability to thrive in a fast-paced environment, manage multiple tasks efficiently, and remain calm under pressure.
  • Receptiveness to feedback and direction from senior chefs.
