Your key responsibilities will include:

  • Managing the production of wort, from bulk malt handling through to fermentation and cask racking
  • Overseeing the operation of the brewhouse
  • Coordinating yeast management and monitoring product throughout fermentation, dry hopping, and fining
  • Ensuring the cleanliness and sanitation of brewery lines, vessels, and packaging equipment
  • Conducting laboratory work and maintaining accurate data collection and record-keeping
  • Managing stock levels of raw ingredients and ensuring efficient use throughout the brewing process
  • Monitoring brewing and processing of batches to maintain quality, consistency, and efficiency
  • Ensuring adherence to written Standard Operating Procedures (SOPs) and maintaining the highest safety standards at all times
  • Performing general brewery cleaning and maintenance
  • Working collaboratively with other team members to achieve brewery goals

**Requirements and Qualifications:**

  • Exceptional time management and attention to detail
  • Commercial brewing experience is highly desirable
  • Brewing certificate from a recognized institution, such as the Institute of Brewing, or willingness to pursue one
  • Ability to work in a fast-paced, physically demanding environment with repetitive motions
  • Strong analytical skills and ability to check and adjust recipes as needed
  • Commitment to the Daniel Thwaites principles of Innovation, Craftsmanship, Eye for Quality, and Warm Hospitality
