About the Role

We are seeking a highly skilled and motivated individual to join our talented Kitchen team at the Grand Central Hotel as a Junior Sous Chef.

As a key member of our culinary team, you will be responsible for assisting the Executive Head Chef in managing the smooth and efficient operation of the Kitchens, ensuring the Hotel's reputation for food quality is always maintained.

Key Responsibilities:

  • Assist the Executive Head Chef in planning, preparing, cooking, and presenting food to the highest standard required by the Hotel and its guests.
  • Contribute to the development of new and innovative menus.
  • Help manage the culinary budget and kitchen expenditure.
  • Ensure Company policies relating to stock management and stock ordering are implemented and monitored.
  • Ensure the hotel complies with all matters relating to food hygiene regulations, environmental health laws, and all other relevant legislation.
  • Ensure the Hotel's 5* hygiene score is maintained.
  • Ensure the security of the kitchen and storage areas is maintained at all times.
  • Provide coaching and development to meet the Hastings standard.
  • Conduct team meetings to communicate standards required, targets, and company information.
  • Ensure all kitchen areas, fixtures, and equipment are properly maintained and presented to the Hastings standard.

About You

We are looking for someone with previous experience gained within a quality catering establishment, who has excellent attention to detail, good communication skills, and a clean and tidy appearance.

Desired Criteria:

  • Experience of creating and writing menus.

Required Criteria:

  • Right to Work in the United Kingdom.
  • Must have NVQ level 2 or the equivalent in Food Preparation and Cooking and hold a recognised current Food Hygiene Certificate.
