Key Responsibilities
- Support the management of food quality and standards throughout all stages of food preparation and production
- Collaborate with the kitchen team to innovate and develop new menu offerings
- Ensure all dishes are prepared, cooked, and presented to the highest standards in accordance with menu specifications
- Maintain compliance with established food preparation, production, presentation, and service standards
- Follow daily kitchen preparation and cleaning protocols
- Uphold a high standard of cleanliness in the kitchen at all times
- Adhere to health and safety regulations and food hygiene practices consistently
- Minimize kitchen waste and implement strategies for waste reduction
- Assist the Executive Head Chef with inventory management and stock-taking
- Coordinate with Restaurant Managers to ensure top-notch service delivery
- Act on customer feedback, both positive and constructive
- Help manage stock and portion control effectively
- Comply with all company policies, procedures, and statutory regulations, including those related to human resources, health and safety, hygiene, and cleanliness
- Ensure all kitchen equipment is in safe working order, reporting any issues to the appropriate manager
- Assist in the safe evacuation of guests and staff during emergencies as directed
- Maintain all required health and safety documentation and procedures, including stock rotation and temperature logs
- Uphold personal hygiene standards at all times
- Support the Executive Head Chef in managing employee relations
- Provide health and safety briefings to casual staff before their shifts
- Assist the Executive Head Chef in ensuring all staff are adequately trained and skilled, maintaining an up-to-date Standards of Procedure Manual
- Help the Executive Head Chef in scheduling kitchen shifts to meet business needs
- In the absence of the Executive Chef, take full responsibility for relevant areas
Qualifications
- NVQ level 2 culinary qualification or equivalent
- Prior management experience
- Previous culinary experience at Sous Chef or Junior Chef level
- A minimum of 2 years experience in a 4/5 star hotel restaurant or banqueting environment
- Experience in a high-volume kitchen setting
- Valid intermediate food hygiene certification
- A strong passion for food and service
- Must have a continuous work history in the UK for at least 5 years.
