The ideal candidate will possess a strong culinary foundation, a passion for quality, and a genuine love for authentic street food. As a Street Food Sous Chef, you will support the Head/SNR Sous Chef in upholding the highest standards of authenticity and quality while efficiently managing high-volume service. You will collaborate with a kitchen team of up to 20, including a Chef de Partie (CDP) who will work closely with you and oversee an additional 2 CDPs. This position requires outstanding teamwork, leadership, and a relentless pursuit of excellence in food preparation and service.
Key Responsibilities:
- Assist in menu planning and preparation that reflects our commitment to authenticity and quality, tailored for large-scale catering.
- Supervise daily food preparation, ensuring each dish is crafted with premium ingredients and presented consistently, even during peak times.
- Efficiently prepare and assemble dishes during busy service periods, maintaining top-notch quality and authenticity.
- Train and oversee kitchen staff, including a direct CDP and additional CDPs, fostering respect for traditional techniques and high-quality ingredients.
- Work alongside the Head/SNR Sous Chef to manage a kitchen team of up to 20, ensuring smooth operations and high team morale.
- Monitor inventory levels, source top-quality ingredients, and manage stock to minimize waste and guarantee freshness.
- Maintain a clean and organized kitchen, adhering to all health and safety regulations, especially in high-volume settings.
- Collaborate with the Head/SNR Sous Chef to innovate new recipes and menu items that honor authentic culinary traditions while catering to large-scale service demands.
- Assist in managing food costs and budgets, ensuring profitability without sacrificing ingredient quality.
Qualifications:
- Demonstrated experience as a Sous Chef or in a similar role within a high-quality culinary environment, particularly in large-scale catering or high-volume service.
- Culinary degree or relevant certification is advantageous.
- Strong understanding of food safety and sanitation standards.
- Exceptional cooking skills with a focus on detail and presentation.
- Ability to thrive under pressure and manage multiple tasks simultaneously.
- Outstanding leadership and communication abilities.
- Experience in managing and training a team, including CDPs and junior kitchen staff.
- Passion for utilizing high-quality ingredients and preserving authentic culinary traditions.
