This key post is responsible for the general management of the catering services department in line with Trust policies and procedures, working with kitchen managers (across sites) to achieve and satisfy department and stakeholder needs in a synchronised and consistent manner and to directly support the Head of Catering Services.
- Line management of the supervisory team, including the head chefs, and support in personnel management
- Day to day organisation of kitchen work and, within budgetary limits, the efficient deployment of all kitchen staff and production of duty rosters, ensuring that work is conducted in a safe way and that quality standards are met
- With support from the Trust’s dietetic service, ensure that food is produced in accordance with the Trust's nutritional policies
- Direct and control all food preparation within established and legislative guidelines
- Formulate standard recipes for all menu items ensuring that due consideration is given to waste, cost, quality control and supporting paperwork
- Liaise with ward staff to ensure the catering service meets patient’s needs
- Support the Head of Catering Services and Lead Administrator in all stages of department wide and site-specific projects
- Ensure correct and adequate procedures and records are maintained to account for Due Diligence requirements under the General Food Regulations 2004 (as amended), and the Department’s Food Safety Management System Documents
- Review and make recommendations to department policies and practice documents
- Check that all food produced meets the required standard in respect to quality, quantity, appearance, temperature and taste
- To support and deputise for the Head of Catering Services
- To ensure relevant contracts are in place with supplier, preparation of tenders, CPW’s and CCRN’s where appropriate
