**Our Cyder Team**

The Newt in Somerset cydery is unique and sits firmly in the forefront of the Visitor Attraction with a modern cellar, and state of the art bottling and labelling line. Our ethos is 100% juice, artisan cyder with no water or artificial sweeteners / flavourings. We have a range of cyders such as Traditional Method Sparkling, Modern, Ice, Single Variety and blended. Apple juice is also pressed, bottled, and packaged onsite. The recipes have been developed over the past 4 years and are well proven and the cyder award winning.

A small team consisting of Cellar Master (overall responsibility for production, sales/marketing), Senior Cyder Maker, 2 x Cyder Makers, Cellar Hand and a London Sales Rep showcase the art of cyder making from Easter to July within the Visitor Attraction, utilising dessert apples form our storage facility.

Output is 130 - 150k litres per year. The Newt has 65 acres of young, standard orchards with over 70 varieties of cyder trees. Apples are also bought in from local orchards either whole or in juice format if needed, based on quantity and team workload.

**Our Senior Cyder Maker**

This is a very rare opportunity for an enthusiastic, passionate, and energetic career cyder specialist to continue the production of our award winning cyders whilst continually improving process and standards within the department.

The successful applicant will need to have a proven technical, commercial cyder production background and skillset, whilst being able to manage the small team and be able to interact / talk with Newt guests on a daily basis.

The Senior Cyder Maker also works closely with the Cellar Master on a daily basis, deciding and planning production & packaging schedules throughout the year. Work rosters are built and communicated online and team members rosters are published at least 1 month in advance to ensure work/home life balance achieved. All team members are multi - role to increase effectiveness / efficiency, to allow contingency planning & back-up.

**Key Responsibilities**
- Cyder production, from apple pressing, through to bottling and packaging.
- Fermentation, additions, ABV / sulphite / acidity monitoring using Alex 500/Hannah lab equipment.
- Planning & ensuring appropriate stock of yeasts/acids/other additives held to meet production plan (Glass / labels / card organised through Cellar Master)
- Quality control of cyder both liquid and packaging
- Upkeep and completion of fermentation and production spreadsheets that comply with HMRC best practice.

**Skills and Experience**
- Proven technical and practical skillset in commercial cyder making.
- Practical and technical experience & expert knowledge of laboratory practices
- In depth knowledge of biochemistry utilised in cyder production process
- Proactive team player able to integrate into a small and effective team.
- Confident & affable personality, able to interact and communicate with Newt visitors and guests.
