The butchery department was launched in 2015 and has been a very successful addition to the offer at Macknade. We are proud to be certified as a butcher of 100% pasture fed beef in East Kent and work with several farms in the South East that are certified by the PFLA.

**The Role**

We are seeking a butcher with a passion and understanding of fresh produce who is looking to enhance their skills and grow within our business. This is a key position, and you will be working closely with the Head Butcher, who you will report into. Preferably, you will have first-hand knowledge of whole carcass butchery, or have excellent knife skills gained from previous experience working as a chef or butcher.

The role will include all aspects of the day to day running of a successful food business as detailed below. There will also be a requirement to help in other areas across the Macknade business as necessary:

- Prepare meat from the carcass ensuring the finished product is of an excellent standard and meat displays are of the highest quality.
- Prepare a variety of products, including sausages to the highest standard.
- Constantly develop and review products, to ensure that the butchery continues to offer exciting choices for customers.
- Minimise and correctly record wastage, to ensure the department operates in a cost-efficient manner.
- Ensure stock and preparation is maintained at sufficient levels, to ensure a smooth service period daily.
- Maintain the butchery HACCP procedures and ensure these are carried out, monitored, and recorded correctly throughout the butchery.
- Ensure the Macknade vision, ethos and values are at the heart of the customer experience at every point within the business.
- To participate in the staff support and development scheme and to undertake training based on individual and operational needs.
- To undertake any other duties as reasonably requested.

Hours of work will vary with the job depending on where the emphasis of the role is each day.

Holiday is pro rata with a full-time rate of 28 days.
