**Sommelier / Bar Manager ** **| Dean Banks at the Pompadour | Edinburgh City Centre**

We are on the hunt for an experienced sommelier to join Dean Banks at the Pompadour. We are looking for someone with amazing people skills, natural charisma, and a passion for food and drink. But first of all, here is a little bit about us.

Chef Dean Banks, Masterchef: The Professionals finalist, opened his flagship restaurant in St Andrews in Spring 2019. Haar has been included in the top sustainable restaurants in the UK, included in the Michelin Guide 2020/21, and received some fantastic accolades. In recent times Haar Restaurant has diversified through its Haar at Home service. Since the beginning of the pandemic, Haar at Home has been delivering fine dining boxes nationwide.

Dean Banks opened his independently run restaurant within the magnificent Waldorf Astoria. Please note this is a stand alone restaurant within the hotel.

The restaurant showcases Dean Banks’ cooking in a relaxed setting. Dean’s aim is to exhibit the best produce that Scotland has to offer. The menu constantly evolves, reflecting the seasons, which embodies our land and seas, producing a menu that showcases Scotland’s natural resources.

As a sommelier, your roles will include:

- Working on the service bar, making drinks (wine, cocktails, coffees)
- Serving wines, including explaining our wine pairings with each course
- Providing consistently excellent customer service.
- Involvement in all aspects of service; setting-up, preparation, liaising with kitchen staff, and cleaning down after service.
- Developing the wine list with our supplier
- Promoting sales and adhering to licensing legislation.
- Serving high end: cocktails, gins, whisky’s, champagne, wine, and coffee

**Experience**:

- Bar experience required
- Great knowledge of drinks; including Old World wine, Scottish spirits, cocktails.
- A great personality and enjoy working as part of a team in a social environment.
- A desire to develop and learn new skill sets

Salary includes service charge.

**Job Types**: Full-time, Permanent

**Salary**: £30,000.00-£35,000.00 per year

Day range:

- Weekend availability

**Experience**:

- Sommelier: 1 year (preferred)
- Bar management: 1 year (preferred)

Licence/Certification:

- WSET LEVEL 2 (preferred)
