**Salary**:competitive

**Working Hours**:40 hours per week annualised with flex up in summer months and flex down in winter months; with regular weekend and bank holiday working. Hours of work will vary but are generally based around the One Garden Brighton operatingand opening times of 8.00am to 6.00pm, therefore some flexibility will be required to meet the needs of the business, so this will also include some evening working for functions and events and whole college promotional events. One Garden Brighton is openall year round seven days per week.

**Reports to**: The Commercial Manager for One Garden Brighton

**Financial responsibility**:Cash handling and financial controls working with EPOS systems, completion of Daily returns and accounting. Stock ordering and controls.

**Plumpton College**:There will be occasional times when the post holder is required to work at Plumpton College (Plumpton Campus) and this will be directed by the line manager.

**THE OPPORTUNITY**

One Garden Brighton is a newly redeveloped tourist destination, a walled garden, rediscovered, reinvented and opened to the public for the first time in spring 2021. One Garden Brighton features expertly designed gardens, One Garden Kitchen, a place to eatand drink, One Garden Market, a retail space complete with nursery, and One Garden Events offering small and large-scale community events. One Garden Brighton is a subsidiary of Plumpton College.

You will be integral to building this new business, shaping and influencing how the tourist destination will run. As Head Chefyou will lead and supervise the day to day commercial catering food production, operations and chefs team.

**THE ROLE**

Your role will be to support the commercial outlet, One Garden Kitchen, a place to eat and drink, including developing the menus and food offer, as well as supporting our busy events programme and developing our commercial functions and events business.

You will be supported by the One Garden Commercial Manager and the Wider One Garden Brighton team, as well as Plumpton College’s Head of Catering and Hospitality and Head Chef.

**THE TEAM**

You will be responsible for the supervision of the chefs team, apprentices, volunteers and students, sharing your passion for horticulture, great food and service and leading by example.

**You will be responsible for: ?**
- Responsibility for the catering operations at One Garden Brighton, managing the day to day operations of the Chef team.
- Production of food for One Kitchen and its pop-up food outlets, for sale in One Market and catering for a range of public, private and corporate events.
- Working closely with the Commercial manager who will oversee the front of house food and beverage operations and resolving the day-to-day issues which may occur.
- Ensuring the menu meets the brand vision, reflecting customer trends and seasonal produce, including costed menus, stock management, utilising produce from the walled garden and Plumpton Estate.
- Ensuring the commercial performance of food and beverage operations, achieving stretching financial targets and maximising profitability.
- Ensuring that food and beverage operations are an integral part of the visitor experience that reflect the walled gardens and organisational values of a leading tourist destination.
- Ensuring the consistent delivery of exceptional customer service with high presentation standards that consistently exceed our visitor expectations.
- Confidently speaking to visitors, students and visiting Plumpton College Staff and answering ad hoc questions presented by them whilst visiting the gardens. Being an expert advisor to all visitors.
- Recruiting, managing, rota for optimal staffing levels, training and developing a fantastic service focused team. Using regular meetings and various tools to communicate with and performance manage staff.
- Working proactively alongside One Garden Brighton and Plumpton College colleagues, volunteers and student to promote the brand, organisational values and our educational purpose.
- The promotion and responsibility for health & safety and food safety.
- Champion the efficient use of resources to minimise the carbon footprint of One Garden Brighton.
- Any other duties connected with the post as are reasonably required from time to time.
