**PURPOSE OF THE ROLE**

To ensure that all meat for our Client, who is a well-known Hospitality company specialising in Retail and Events, is prepared and presented correctly. Ensuring high standards of meat product innovation in is kept at all times.

**REPORTING**

Will be reporting directly to the Executive Head Chef

**GENERAL RESPONSIBILITIES**
- Ensure to report for duty punctually, wearing the correct uniform at all times.
- Ensure the highest standards of grooming and personal hygiene standards are kept at all times.
- Maintain professional decorum in all areas of the building, whilst on and off duty, and be a representative of the company at all times.
- Maintain good working relationships with your colleagues and all other departments.
- Ensure highest standards of customer care at all times, providing a friendly, courteous and professional service at all time.
- Attend necessary departmental meetings and training courses as required.
- Provide a friendly, courteous and professional attitude at all times.

**DIRECT RESPONSIBILITIES**
- To be responsible for the meat cutting, trimming and storing (from carcase to finished product) for the restaurant, café and events operations ensuring that set procedures are followed correctly
- Be responsible for all sausage and bacon manufacture for the café department
- To ensure that the meat is prepared, weighted and wrapped accordingly to each department
- Support the Executive Chef with menu planning by suggesting new meat products and cuts on the menus
- To be responsible for the company’s controlling
- and food preparations procedures e.g. portions control, cost and waste
- Liaise with the farmer to ensure a constant and correct supply of meat based on scheduled events and stock-take
- To arrange and check all meat and fish deliveries ensuring that quality and quantity is correct
- In charge of the cleanliness of the meat preparation room and proper storage of all meat in the freezer and fridge
- Ensure the butchery equipment, hanging room and preparation areas are left clean, tidy and secure at the end of each working day and this is recorded
- Assist and be present during any sanitation inspections of the meat preparation areas
- To comply with all legal requirements with particular reference to (but not exclusively) fire regulations, security, licence requirements and any Local Authority or Client stipulations.
