**Job title**:Sushi/Sashimi Assistant

**Pay**:Competitive, DOE

**Contract**:FULL TIME Only. Contract minimum 45 hours.

**Division/Department**:Kitchen, Back of House

**Reports to**:Head Chef

**Job Purpose**:As a Sushi/ Sashimi Assistant you will help your line managers with daily tasks in order to run the site smoothly.

**Main Duties and Responsibilities**:

- Sushi creation, be able to innovate in the kitchen, assisting the Head and Sushi/Sashimi Chef with completing orders to a high standard
- Filleting fish, and preparing sushi and ingredients
- Take regular inventory of his restaurant's food supply, including fish, rice and other materials
- Working effectively with the rest of the team to delivery outstanding customer service experience

**Essential Skills**:

- A minimum of 2 year experience/ training
- Prior experience in making nigiri and maki, tempura, udon, and Ramen, and in cutting sashimi
- A keen interest / knowledge of Japanese cuisine and other Japanese products

**Desirable skills**:

- English speaker with the ability to clearly and concisely communicate in spoken English
