Image on Food Ltd are one of the leading gingerbread manufacturers in the UK through our brands Original Biscuit Bakers and Billingtons Gingerbread.

As a biscuit Bakery Operative, you will be conscientious and have a keen eye for detail. The role involves working within a small bakery team, manufacturing our biscuit range. To complete the role, you would follow the process from preparing mixing the ingredients, cut the biscuits out, bake them and finally place them onto trays ready to be decorated. This role also includes the accurate completion of paperwork adhering to food safety and health and safety standards, and so numeracy and literacy skills are essential.

**Shift pattern: Monday to Friday 6:00 a.m. to 2:30 p.m. Starting Salary £9.80 per hour**

**Main Tasks and Responsibilities**
- Maintain standards of the Bakery quality. Follow recipe details, ensuring correct ingredients, quantities, bake times/processes are adhered to.
- Weighing and mixing the ingredients as required to the work sheet instruction.
- Hand knead and roll the gingerbread paste, place the paste into the biscuit machine where the gingerbread shape will then be deposited onto the baking trays, and placed in racks ready for baking.
- Ensure the correct number of products are placed on to the trays
- Load the oven and set the temperature/time required. Monitor the colour of the biscuit to ensure it is not over or under baked
- Once the rack has come out of the oven and cooled transfer biscuits onto trays ready to be decorated.
- Mix the icing colours and sugar paste/ Hand knead and roll the coloured paste, place this into the Sugar Paste machine, the Sugar Paste shape is then deposited onto the tray/put back into the racks ready for decorating.
- Completion of production paperwork for Food Safety (BRC) and Health & Safety. Ensuring that Food Safety and Health & Safety standards are met.
- Completion of daily Health & Safety start up checks
- Maintain the product quality and safety including traceability recording of the product with batch codes
- Managing critical control points (CCP) in production against the approved procedures.
- Report non-conforming products to the Team Leader.
- Ensure that products that do not meet specifications are placed in the “holding area”
- Assist the Quality Coordinator with any investigations to find the root cause and what corrective should be taken
- Organoleptic testing (taste, texture) - random daily samples will be retained for tasting at daily planning meetings
- Ensure Hygiene procedures are adhered to including daily cleaning schedule. “Clean as you go “during the day.
- Work closely with other departments to ensure that the bakery is run as efficiently as possible.
- Any other adhoc duties that may arise.

**Health, Safety and Environment**
- To be responsible for your own safety and not jeopardise the health and safety of others.
- To ensure you, the team and any visitors comply with all statutory and site Health, Safety and Environmental procedures.
- To ensure unsafe practices or conditions, accidents, incidents and dangerous occurrences are reported accordingly, and corrected where practicable
- Ensure correct PPE is worn at all times

**Skills, Knowledge and Qualifications**
- Previous experience of working within food production/bakery environment would be advantageous but not essential.
- Good verbal and written communication and listening skills
- Numeracy and literacy skills are essential
- Good organisation skills
- Attention to detail - work to set baking schedule, highlighting any deficiencies/issues.
- Ability to work well under pressure and to meet production set targets and deadlines
- Basic knowledge of Health & Safety and Food Hygiene standards (training will be given)
- Willing to undertake training to support the position.
