Head Brewer

This is a great opportunity for somebody to join a dynamic, exciting and well respected brewery. As Head Brewer you will be responsible for the smooth running of brewing operations, including staffing, scheduling and maintenance. You will work closely with our existing brewers and sales team to develop new recipes and improving existing core beers.
As Head Brewer you will be responsible for
- The design, development and execution of all the beer that Dark Revolution produces.
- Creating the production schedule and ensuring beer production can meet sales targets.
- Ensuring all raw materials and packaging materials are on site as needed and stock levels are monitored to minimise stock holdings and maximise freshness.
- Ensuring accurate records are kept of brewing and packaging checks.
- In charge of all raw materials selection and ensuring we get competitive rates on all raw materials and packaging.
- Brewhouse and packaging plant maintenance.
- QA/QC of beer in tank and packaged beer, including external lab QC as needed.
- Ensuring health and Safety standards are adhered to on site and that staff have appropriate training and PPE
- Ensuring all food safety standards are adhered to, housekeeping is adhered to and general tidiness and cleanliness of the brewery is maintained
- Updating and maintaining our HACCP programme and updating as needed
- Managing Salsa and other accreditations as required.
- Creating accurate costings to enabling us to accurately price beers
- Managing our team of brewers including scheduling holidays and TOIL, scheduling ad hoc staff as required
- Interviewing and hiring of new staff in tandem with the Directors
- Seeking out new beers and brewing techniques and developing/integrating them as needed, we aim to release at minimum of one new beer per week.
- Managing production of small run kegs on our 50L pilot system
- Undertaking monthly stock takes to ensure accurate records are kept
- Filing our Monthly duty return
- Scheduling weekend checks and ensuring these are completed as required
- Representing Dark Revolution at trade events as required
- Be a confident leader with proven management experience
- Hold Brewing Qualifications - MSc, IBD diploma or equivalent qualification in the food/beverage sector
- Have several years’ experience in the brewing industry
- Be willing to muck in on production, packaging and dispatch as needed
- Have a great eye for detail and quality
- Be proficient in Excel and Breww
- Have a drive for continuous improvement and professional development
- Have an in depth knowledge of beer production with a focus on hazy IPA’s, lagers, Imperial Stouts and Fruited Sours
- Be physically fit and able to lift 25kg sacks
