This is a unique opportunity to develop skills to become a butcher but also to specialise the rapidly expanding market of biltong. You will learn how to properly prepare meat for biltong along with other products.

Hours: 42.5 Monday to Friday

As this is an apprenticeship role, you will come to college for training. Please consider how you will commute to and from Plumpton College.

**About the employer**

We have been operating since 2017 and make biltong for sale in The Sussex Biltong Co branded shops and online. The head office and production unit are based in Balcombe, West Sussex.

**What will the apprentice be doing?**

The apprentice will undertake a variety of roles, including:

- Cutting meat for biltong.
- Measuring and mixing biltong spices.
- Mincing meat for sausages.
- Weighing and packaging meat and sausages.
- Hanging biltong products to dry.
- Maintaining batch records.
- Cleaning work stations and machinery.

**What training will the apprentice take and what qualification will the apprentice get at the end?**

The final certification will be for L2 Butchery.

The apprentice will learn:

- Knife skills - including cutting, boning, trimming and mincing of meat
- Health and safety practices, food safety and hygiene and key legislation
- Using butchery tools and machinery - including mincing, sausage making, bacon curing, vacuum packing
- Business profitability, maximising productivity, efficiency and customer care
- Team work and customer care skills
- Specialist retail shop or processing plant butchery skills
- Qualifications Awarded_
- Butchery Level 2 Apprenticeship Certificate
- Level 2 award in food safety
- Level 2 award in health and safety
- Level 2 award in knife skills
- Level 1 in maths and English (if applicable)

**Things to consider**

Own transport is a advised. The factory can be cold in winter and the job can be quite physical. It involves handling raw meat.
