Progress your pay as you develop your skills through our Skills Development (SD) Levels:

- SD1: £10.50 per hour, and be eligible for £130 gratuities per month
- SD2: £10.75 per hour, and be eligible for £150 gratuities per month
- SD3: £11.00 per hour, and be eligible for £170 gratuities per month
- SD4: £11.25 per hour, and be eligible for £190 gratuities per month
- SD5: £11.75 per hour, and be eligible for £210 gratuities per month

**THE ROLE OF KITCHEN PORTER**
An integral role within the kitchen, you are key in ensuring both kitchen & restaurant service runs smoothly and don’t run out of any items.
- Actively maintains the cleanliness of the Kitchen floors and can identify the correct chemicals and tools to be used when cleaning floors.
- Can highlight when stock and orders are running low to inform the Head Chef.
- Restock when needed; Blue roll, sanitisers & soap dispensers.
- Organises and cleans the dry store to a high standard.
- Windows, Doors and Shelves are washed and dried for kitchen use.
- Demonstrate a thorough cleaning of touch points.
- Can demonstrate a basic understanding of Kitchen Health and Safety.
- Demonstrates an understanding of how to clean kitchen equipment to a high standard with assistance.
- Can clearly identify the difference between irritant/harmful and toxic chemicals.
- Ensures storage of chemicals in the correct place.
- Keeps the store cupboard organised and clean.
- Ensures all waste is deposited in the correct areas - Identify the correct bins for recycling, food waste and oil.
- Keeps the bin area tidy.
- Assists the kitchen team with Vac Packing and food prep

**ABOUT OUR FOOD**
Diners are ‘spoilt for choice’ when visiting Gilpin Hotel & Lake House in 2023 as the property completely transformed its F&B offering by becoming THE foodie destination of the region. Three new high-profile chefs were appointed to oversee its three restaurants. Though the three restaurants are very different, led by 3 very different chefs, they work together, sharing the same vision, commitment, passion and values, built on sustainable sourcing with low to no food miles and supporting local producers. Under the guidance of owner Barney Cunliffe, the property has also introduced its’ strategy for sustainability, which include new procedures and techniques for procurement, scrutinising the supply chain and developing a new Culinary Centre, complete with its own on-site butchery, and working with local farms and specific herds.

Ollie's aim is to create his own unique Lake District restaurant with sourcing, local produce and sustainability at the top of his agenda. All of course topped with a sprinkling of culinary magic and storytelling that pushes the boundaries of what diners have come to expect at this popular fine dining establishment.

Aakash has exciting plans to transform the menu at Gilpin Spice which is renowned locally for its inspired fusion of Asian-influenced cuisine. Aakash views the property’s new sustainable and sourcing strategy as a particular positive for Gilpin Spice, throwing down a challenge that he hopes will lift the new menu to new realms of possibility.

**Tom ‘Westy’ Westerland - Head Chef - Knipe Grill at Gilpin Lake House**

Westy has brought his own style of cooking with coal and various types of wood to the restaurant. His focus is on storytelling and communicating that to the guests so that they know the background of the dish and what the inspiration was behind it.
