Head Sommelier

**About Us**

Rockliffe Hall is an AA-rated 5 red star resort in the north of England and is set within 375 acres outside the village of Hurworth, near Darlington in County Durham. We aim to provide an outstanding personalised service to each guest who stays, spas, golfs and dines and with us, acknowledging special occasions and making them memorable for all guests. We are currently seeking a Sommelier to join Team Rockliffe

**The Role**

The main responsibilities of the role will be (but not limited to):

- Develop and maintain the highest levels of beverage service standards within the Orangery and Old Hall Bar and Lounges.
- Maintain and develop relationships with suppliers and in some cases directly with wine producers.
- Engage wine makers/producers in organising wine dinners and wine tastings/events
- Responsible for the recommendation and sales of wines and other beverages to guests.
- Maintain and update wine list. Check pricing is up to date.
- Improve the wine list with the aim to compete in national & international competitions.
- Work with head chef on menu & wine pairings.
- Introduce new drink pairings following national and international trends
- Organise and promote wine-tasting sessions or events
- Attend wine fairs and wine tastings nationally and internationally.
- Compete in related competitions to promote The Orangery Restaurant & Rockliffe Hall.
- Train front of house about wine / wine matching. Make sure all service staff knows which wines to recommend to each dish of the menu.
- Keep up to date and comply with liquor and license legislation
- Carry out monthly stock control, inventory. Update continuously all stock forms.
