**Job Purpose**
To provide meals of an exceptional quality to satisfy the needs of our residents and visitors as required, complying with current Food Hygiene and Health & Safety legislation, whilst managing the team of kitchen assistants. Ensure that the service is carried out in an efficient and effective manner and the highest standards are always maintained.

**Main Duties and Responsibilities**

**Food Production and Service**
- Prepare and cook all meals as required for our residents and guests, both in Wolfson Hall and the Kelvin Conference Centre.
- Ensure the quality and presentation of food is to the highest standard and in accordance with the daily specification sheet.
- Understand and encourage the principles of safe food handling to ensure all food preparation that takes place in the kitchen is safe and adheres to current food hygiene regulations.
- Receive and log all food and non-food deliveries whilst on duty.

**Menu Planning**
- Support the Assistant Manager (Catering) to design and develop menus.
- Monitor trends within the customers choices to allow us to change menus during term if required.

**Staff Supervision**
- Ensure staff start and end their shift at the correct time.
- Ensure staff are dressed in the correct uniform.
- Ensure PPE is used when necessary.
- Adjust daily duties of team members if required.
- Manage the cleaning schedule effectively.
- Manage any conflict effectively.

**Administrative Duties**
- Complete and file due diligence paperwork as required.
- Populate weekly rota and cleaning tasks for Kitchen Assistants.
- Report faults and near misses as they are discovered.
- Support the management team when the office is closed (issuing keys, dealing with complaints etc).
- Administer all stock control measures as directed by management.
- Complete Allergen and Special Diet paperwork as required.
- Ensure the security of all catering areas at all times.
- Carry out start and end of day procedures.

**Flexibility**
- Be available to cover shifts out with the usual shift pattern when holidays are booked, or sickness occurs.
- Be positive to changes in routines which are made to benefit the service.

**Knowledge, Skills and Experience**

**Knowledge/Qualifications**

**Essential**
A1 Formal Chef Qualifications required (NVQ Lv2 or City & Guilds 706/1 & 706/2 or equivalent).
A2 Basic Food Hygiene Certificate.
A3 Working knowledge of the HACCP food safety system.
A4 Knowledge of special diets, food intolerances and allergens.

**Desirable**
B1 Intermediate Food Hygiene Certificate.
B2 Level 2 Allergen Training certificate.

**Skills**

**Essential**
C1 Ability to prepare a wide variety of dishes to suit a mix of dietary tastes.
C2 Good time management and the ability to work under tight time constraints.
C3 Ability to work well under pressure.
C4 Good numerical and literacy skills.
C5 Ability to work under own initiative and to agreed timescales as dictated by service requirements.
C6 Excellent communication and customer service skills.
C7 Energetic and hard working.
C8 A passion for continuous improvement.
C9 Adaptable and flexible approach to work, putting the needs of the business first.

**Desirable**
D1 Experience of developing new dishes.
D2 Basic knowledge of Microsoft Office.
D3 Experience in manual handling.

**Experience**

**Essential**
E1 Relevant work experience in a similar role.
E2 Experience of communicating effectively with customers.
E3 Experience of managing staff.
E4 Experience of conducting and implementing risk assessments.

**Desirable**
F1 Experience of working in a similar catered environment.
F2 Stock control experience.

**Terms and Conditions**
Salary will be on Grade 4, £22,197 - £24,715 per annum, plus shift allowance.
This post is full time (35 hours p/w) and open-ended.
The shift pattern is a two week rolling cycle:

Week 1 Mon-Tue 7am-3pm Wed-Fri 12pm-8pm
Week 2 Mon-Tue 1pm-8pm Wed 7am-1pm Sat-Sun 9am-7.30pm
