Our client, an established operastor with busy in house restaurants is looking for a Fresh Food and Restaurant Operations Manager.

Offering a menu of locally inspired restaurant meals, a coffee bar serving snacks and drinks and a retail food hall all offering food and drink from locally sourced producers.

The Role

As the Fresh Food and Restaurant Operations Manager, you will be responsible for managing a large food service operation which includes a beautiful new 500-seat Restaurant & Coffee Bar.

You will work closely with your Food Hall colleagues on the production and supply of freshly prepared counter products as well as fresh food production for neighbouring sites.

A true foodie, you will bring your personality to the role inspiring and motivating your team’s passion to produce fresh and fabulous food.

Duties

The Fresh Food and Restaurant Operations Manager will:

- Oversee set up of the daily Restaurant operation ensuring readiness for service.
- Develop a consistent customer offering across both the Restaurant and fresh food counters
- Manage our in-store bakery which produces fabulous cakes and breads for both our restaurant and fresh food counter
- Develop your team of managers and experts to work collaboratively to achieve sales, increase customer footfall, minimise waste and protect GP margins.
- Lead and coach the team create a welcoming and efficient service for our customers, taking every opportunity to create a WOW experience.
- Work with your managers to recruit, train and develop a highly skilled team who are passionate about food and service.
- Ensure our Restaurant and Fresh Food Counters operate to the highest of Food Hygiene and Health and Safety Standards.
- Plan team rotas and holidays within cost control and service level requirements.
- Monitor and order stock and undertake weekly stock counts to ensure GP target is achieved.

Attributes

The Fresh Food and Restaurant Operations Manager will have:

- Hospitality management experience (running a busy restaurant, coffee shop or cafe) with the ability to manage a large team and significant peaks in service.
- Experience of fresh food production and retail would be advantageous.
- Experience of managing diverse teams across all skill and service levels.
- Passion for delivering exceptional levels of customer service
- Strong communicator who can motivate and develop their team to deliver with enthusiasm and great personality.
- Knowledge of Food Hygiene and Health and Safety requirements in the Catering Industry.
- Commercially accomplished to achieve sales and profit targets.
- Passion for delivering the highest quality food and service.
