Approximate Salary: Competitive & Depending on Experience

Hours worked per week: 37.5 Hours a week.
Day worked per week: Monday to Friday with Weekend events (TOIL given).
On call: on occasions

**Purpose of the role**:
In this role the Principal Butcher will be responsible to ensure supply for all red meat and poultry sales both online. The PB will be an advocate of the meat products, ready to attend events to promote our range of products from our farm.
The PB will be first and foremost responsible for the cutting and sale of beef and other red meat as it comes into production. He/she will also be ready to help with the slaughter and preparation of poultry along side our poultry manager.
In the future, our organic Pasture for Life sheep business / heritage pigs will come into production. The successful applicant will be confident to butcher and understand best cooking uses for all of the animal groups from our farming operations.
**Duties and responsibilities**:
To be knowledgeable of carcass grading and conformation with a confident approach to butchering from a full carcass.To be able to discuss meat quality and cooking of our product when promoting them to customers.With some experience of B to B and B to C market engagement and sales completion on a range of livestock productsWorking with production teams to deliver premium quality consistently.To persuasively promote the deliciousness of our Lincoln red meat, poultry and dairy products and how best to enjoy them.To assist with customer needs when required and ensuring customer enquiries and orders are fulfilled.Keeping track of stock records on fileBeing able to recognise any new orders using our online ordering system.Complete required South Ormsby Estate training with a focus of self-development
**Person Specification**
Self-motivated, enthusiastic and capable of working alone.Strong communication and interpersonal skillsThe ability to plan and prioritise workloads with a structured approach.Good administrative and computer skillsHappy to do training to expand their knowledge.Working to exacting deadlines.A full driving licence is required.
**Education level**:
Minimum: No minimum
Ideally: NVQ (Level 3) Food technology
**Experience**:
Minimum At least 2 years of experience as a butcher.Ideally: Some experience in Kitchen (Commis-Chef) and or cheese production.
**Personal attributes and other requirements**:
Shows attention to detail in all aspects of their work and a commitment to excellence in all areas.Must be clean and well presented at all times with a high regard for Food Hygiene.
