**Sommelier Ideal Profile**:

- Holds a WSET Level 2 or equivalent Sommelier qualification, demonstrating a foundational level of expertise in the field
- Genuine passion for wine, Champagne, and mixology, with a warm and welcoming personality that enhances the guest experience
- Works closely with the Head Sommelier, Executive Head Chef, and Restaurant Manager to offer suitable wine pairings that complement the food offerings and delight guests
- Contributes to the creation and updating of the wine list in coordination with chefs and the Head Sommelier, ensuring alignment with food offerings and guest preferences
- Engages with guests to understand their preferences and provides personalized recommendations on wines to suit their tastes and food choices, ensuring exceptional service throughout the dining experience
- Works effectively as part of a team and individually, supporting the training of wait staff on available wines and collaborating with colleagues to enhance the overall guest experience

**Sommelier Responsibilities**:

- Work with the Head Sommelier and Chefs to ensure that aperitifs, digestifs, and wines are aligned with the food offerings and guest preferences
- Contribute to the creation and updating of the wine list in coordination with chefs and the Head Sommelier, ensuring it reflects current trends, guest preferences, and complements the culinary offerings
- Engage with guests to understand their preferences and provides personalized recommendations on wines to suit their tastes and food choices
- Ensure wines are served at the correct temperature and within the proper glassware, serving water, aperitifs, digestifs, and wine, and clearing and replacing glassware as required
- Manage the wine cellar, ensuring it is fully stocked and that open bottles are stored properly to maintain their quality and taste
- Train wait staff on available wines, ensuring they have a basic understanding of wine varieties, regions, and food pairings to provide informed recommendations to guests
