Little Moons are frozen and chilled mochi, a fusion of Eastern and Western cuisine - soft and chewy rice flour dough wrapped around balls of ice cream, cheesecake or chocolate ganache to create a distinctive, Bite-sized and delicious dessert that’s bursting with flavor.

Their rollout across Europe has been pioneered by sister and brother duo Vivien and Howard Wong, who founded Little Moons in 2010. The product’s roots are in high-end restaurants, but over the last five years retail packs have swept the ice cream category in grocery and food service.

The business has rapidly established mochi across Europe and will exceed £25m in revenue in FY20/21. Based on experience in the USA, mochi ice cream is likely to make up 2-3% of the total ice cream category within 1-2 years.

**THE ROLE**

As a Team Member, you are our 'Movers & Makers' in the company, right at the centre of production ensuring that our product is created to the high standards that our customers deserve In our production team you will be working together with others to ensure that our product is produced to high standards, adhering to all company policies and procedures. There are multiple areas to production that you could work within from:

- Packing (High care and low care)
- Ice-cream production
- Product making (high care)
- Dough Room (High-care)
- Night Hygiene

**Key Duties**:

- To ensure all equipment are assemble safely and efficiently, required for the production and to communicate with the team and management any identify issues with machines.
- To follow the production schedule accordingly to fulfil daily / weekly production plan on time and communicate the schedule with the team members.
- To keep all of the equipment stocked up and running continuously throughout the production run.
- To communicate with the all the teams to ensure the changeovers of the products and any stoppages are coordinated.
- To carry out the changeovers of products is done in safe and hygienic manner by following the cleaning procedures.
- To ensure the Health and safety Policies are followed at all times.
- To ensure all the company hygiene and Technical Procedures are followed at all times.
- To follow the HACCP policy at all times, and that CCPs are checked and recorded completely.
- To identify any issues that could impact the production performance and seek to resolve them using practical problem-solving methods.
- To ensure paperwork is completed on time that form a key part of the traceability system.
