**GENERAL OVERVIEW**

Working under the direction of the Catering Supervisor, the Catering Assistant will provide a reactive role that will be utilised to provide support as-and-when required across EQUANS catering outlets, while assisting in the delivery of a high standard of food service meeting the requirements of food hygiene legislation and EQUANS Food Safety Management System (FSMS) at the Royal infirmary of Edinburgh.

**DUTIES AND RESPONSIBILITIES**
- To work within established pre-set catering regeneration or traditional menu production methods as appropriate in the provision of meals to the retail or patient catering services.
- Hygienic handling of food products in accordance with food hygiene legislation and the Trust/Company Food Safety Policy (HACCP).
- Observation of statutory and Trust/Company food hygiene regulations.
- Taking and recording of food temperatures and seeking further instruction where they are outside of critical limits.
- To assist in the preparation, regeneration, and basic cooking of main menu items.
- To support and maintain required stock levels.
- To provide Catering Assistant support across Catering Services by redeployment where needed to support operations.
- Produce all products in accordance with set menus, cooking methods, allergen controls and FSMS controls.
- To be involved in the general cleaning following the appropriate cleaning schedules, and the cleaning of all catering equipment.
- To support the retail supervisor to complete non-stock requisitions to maintain required stock levels.
- Serving meals in an appetising and attractive manger that complies with the company’s portion control guidance.
- Appropriate disposal and recording of waste in accordance with instruction ensuring that wastage is kept to a minimum.
- Production of basic conventional patient meals if required.
- Responsible for the picking and packing of in-patient menu/meal food order items in line with in-patient meal summary sheets whilst working in RIE.
- Ensure that all vending machines are adequately stocked, and records of sales are completed.
- Monitor storage equipment and report all failures.
- Adhere to COVID 19 control measures.
- Main hot food offer quality control measures.
- Complete/monitor all catering forms to support the HACCP analysis including delivery control forms.
- To ensure stock control and rotation within main food storage areas.
- Ensure that a high standard of personal grooming is maintained including wearing the required uniform and PPE provided.
- To work within established catering routines using own initiative as appropriate in the provision of an In-patient service and the use of raw ingredients within the commercial restaurant.
- The hygienic handling of food products in accordance with food hygiene legislation and the Trust/Company Food Safety Policy (HACCP).
- Observation of statutory and Trust/Company food hygiene regulations.
- Taking and recording of food temperatures and seeking further instruction where these are outside of critical limits.
- Ensure equipment is stored and maintained in a clean and tidy condition.
- Report the need for equipment, structural, and fabric repairs.

**TRAINING**
- To undertake mandatory training commensurate with the role as-and-when required, e.g., food hygiene, Health, and Safety at Work, COSHH, HACCP, fire safety, and Trust/corporate policies and procedures, etc.
- Develop and demonstrate an understanding of any specific allergen and dietary requirements to meet patient needs.
- Must be willing to undertake multi-catering task operational training incorporating patient and retail catering.
- Hand Hygiene - part of basic hygiene refresher.
- Allergen training.
- HACCP FSMS Processes and Forms.
- Level 2 Award in Food Safety.
