As a Sous Chef at Pollen Street Social, you will play a pivotal role within our culinary team, working closely alongside our renowned Executive Chef, Dale Bainbridge, to achieve culinary excellence. Responsibilities: 1. Collaboration with Executive Chef: Work alongside the Executive Chef to maintain the highest standards of food quality and presentation, ensuring consistency and excellence. 2. Kitchen Leadership: Supervise and motivate the kitchen team under the guidance of the Executive Chef, ensuring a smooth and efficient workflow while promoting a positive work environment. 3. Quality Assurance: Monitor food preparation and cooking processes to guarantee adherence to recipes and quality standards. 4. Inventory Management: Support in the management of food and kitchen supplies inventory, minimising waste and controlling costs. 5. Safety and Sanitation: Maintain high levels of hygiene, cleanliness, and food safety standards in the kitchen, adhering to health and safety regulations with guidance from Executive Chef Dale. 6. Training and Mentorship: Provide guidance and support to junior kitchen staff, assisting them in developing their culinary skills. 7. Procurement Expertise: Assist in sourcing and ordering high-quality ingredients from local suppliers and ensure their timely delivery. 8. Culinary Innovation: Contribute to the development of new techniques and creative culinary concepts to enhance the restaurant's reputation. Qualifications : 1. Proven experience as a Sous Chef or in a similar role within a fine dining establishment. 2. Strong knowledge of modern British cuisine and culinary techniques. 3. Exceptional leadership and team management skills. 4. Creativity and a passion for culinary arts. 5. High standards of cleanliness and food safety. 6. Excellent communication and organisational skills. 7. Ability to work in a high-pressure, fast-paced environment. 8. Relevant culinary qualifications and certifications are a plus.
